{Butterfly Brownies}

Vegan. Gluten Free. Delicious.



These amazing bites are so yummy and sweet without too many added ingredients. You can definitely add your own flare to them, and they make the perfect snack, or sweet treat whenever you want. :) 

Recipe:

Cupcake:

1 + ½ cup flour (I did 1 cup Coconut flour, and 1/2 Buckwheat) 3 tablespoons cocoa powder 1 cup coconut sugar ½ teaspoon salt 1 teaspoon baking soda
1 teaspoon vanilla extract 5 tablespoons coconut oil
1 teaspoon maple syrup or coconut nectar 1 cup water
1/2 cup vegan chocolate chips or broken chocolate bar

Frosting:
1 7.4 OZ can of condensed coconut mylk
1 Tablespoon of butterfly pea powder (or any superfood powder/color you'd like)
1/2 cup stevia or powdered sugar, you could probably use a vegan protein powder too if you want!


Method:
Mix all dry ingredients and then add in the liquid ingredients. Fold in the chocolate chips/bar last.

Line a cupcake pan and use ice cream size scoops.
Place in a 350 degree oven for 25-30 minutes.

While that is baking, create the frosting!

Using a beat mixer, add all of the frosting ingredients into a bowl and mix! Place into the fridge or freezer to cool a bit and use a pipe bag or scoop and spread onto the cooled cupcakes!

You can add a peanut butter protein fluff on top too if desired! (PB, splash of water, and vanilla vegan protein powder)
