The BEST Season Shift Salad You'll Ever Have. :)

 Seasons change; both environmentally, and metaphorically in life.

The produce also changes each season, and it's always delicious to consume the "in-season" items.

This salad incorporates simple ingredients that can be found all year round, but within a certain season, can be altered to your liking or what is most available. 

This is also one of those salads that can easily be made ready for meal prep, easy to put together in the moment, and something you will learn to crave! I promise you, once you find which additions you love most, you could eat this every single day, and not get tired of it! It also is so incredibly good for your body, mind, and soul.

The Base // Must Haves

  • Greens Mix of your choice - I love a mmix of power greens including spinach, arugula, kale, and red lettuce
  • Pecan halves (raw or candied)
  • 1 or 1/2 diced red apple (honey crisp for sweeter, fuji or gala for more neutral sweet)
  • Baked Sweet potato or yam (You can even steam or heat up a frozen variety of sweet potatoes as well, but just be sure it cools down prior to adding into the salad)
  • Feta "cheese" pieces - my top pick is the Violife VEGAN Feta
  • pomegranate seeds

The Dressing

Hear me out on this.. Add as much or as little as you like of each--more if you are batch creating)
  • Raw unfiltered tahini (sesame seed butter)
  • Maple Syrup
  • Touch of water 
  • Cinnamon
Mix and shake together in a separate jar or bowl. 
Once your salad is assembled, pour over desired amount of the dressing and let it marinade together for about 4/5 minutes.

Substitutions

Obviously if you are allergic or would prefer another ingredient, there are very simple swaps you could try.

For the pecans, you could always try sliced almonds or walnuts, and for the dressing you try try using coconut nectar or date syrup or discard any sweetener as well. I personally think the sweetness adds an amazing taste to the whole salad though!

Summer:
The Base, plus add:
  • Fresh Strawberries or Blueberries for a tangy sweetness
Autumn:
The Base, plus add:
  • Pistachios for an extra crunch
  • Dried Cranberries 
Winter:
The Base, plus add:
  • Butternut Squash 
  • Fresh pumpkin
Spring:
The Base, plus add:
  • Fresh mandarin orange slices 
  • Diced almonds

The options are truly endless, and you will fall in love with each creation! Perhaps even try a new rendition each week! :) I love having some almond flour crackers along side.
You can even pair this salad with a soup!
