Sun Berry Green Bites (The perfect healthy Valentine's Day Treat)

 

We love to treat ourselves, right?

And although I do love a vegan ice cream ... sometimes I'm wanting something simple and on-the-go.


Today, I bring you the perfect energy bites to power through the day with tons of nutrients!
You can eat these on their own, on top of smoothie bowls, with fruit (I love pairing them with fresh crisp apples!, or you can even create this recipe into a crumble and put on top of salads, oatmeal, etc!

Now, the key here is dehydrated strawberries, but you can TOTALLY use another dried fruit of choice (I recommend prunes, figs, or blueberries).



Recipe & Method:

(Use more or less of the ingredients or double it depending on desired amount)

Using a food processor or high speed blender:

Put in:

  • 1 cup of soft medjool dates
  • 1 cup dehydrated strawberries (or fruit of choice)
  • 1/2 Sunbutter
  • 2 TB greens powder or spiralina (optional)
  • 1 scoop of vegan vanilla protein powder (optional)
Optional: Roll each ball in shredded coconut, cocoa powder, or raspberry/acai powder if desired!
You can even top with vegan chocolate chips, or dunk into melted vegan chocolate and keep in the freezer. :)

& That's ALL!

Now trust me, you can go all out if you'd like. I definitely have in the past. I love adding in mulberries, hemp seeds, maple syrup, goji berries, almonds..etc. 
But the key here is simple, and quick for on-the-go so you can stay healthy while enjoying the day doing the things you LOVE to do. Maybe even being with someone you LOVE.
