Nothing Says Summer like Strawberry ROSE Lemonade


I LOVE Summer, and if you're in the mood for something sweet, yet full of healthy ingredients, I have the perfect loaf for you! :)

ALL VEGAN AND CAN BE MADE GLUTEN FREE

I came across these amazing berries one day, and not only do they taste amazing on their own (a subtle sweet/rose flavor), but they taste even better baked! :)

This recipe also features my FAVORITE pure rose nectar, which adds the touch of rose flavoring. Rose nectar is amazing for healthy skin, hydration, and energy!


I hope you enjoy this loaf as much as I do! 


This loaf can be made with solely dates (a natural sweetener), or you can add the additional bit of raw sugar as well. I prefer it a tad sweeter, so it's all personal preference!






RECIPE:

WET Ingredients

  • 2 Tb. Lemon Juice
  • 1 cup Almond Milk, or other Non-Dairy Milk 
  • (I actually prefer using 10 macadamia nuts and one cup water)
  • 1/2 cup Dates, pitted and roughly chopped
  • 1 to 2 tsp Pure Rose Nectar
  • 1 tsp. Vanilla Extract 

DRY Ingredients

  • Zest of one medium-sized lemon, about 2 tsp. worth
  • 1 cup baking flour ot Oat Flour (GF) (108 g)
  • 3/4 cup Almond Flour or Meal (84 g)
  • 1/4 tsp. Salt
  • 1 tsp. Baking Soda
  • 1 1/2 Tb. Sugar

BERRIES

  • 1 1/4 cup Fresh or Frozen Strawberries 

Pre-Heat your oven to 350 degrees.

Mix all dry ingredients together in one bowl.
Using a high speed blender place all of the wet ingredients in and blend together.

-Zest lemon first and use the juice from that same lemon. :)

Combine wet and dry ingredients together in the bowl, and fold in berries last.

You can place more flour on the berries so they don't sick down to the bottom of your loaf pan. Also, place more berries on top once the batter is in the pan! 

I use coconut oil to prep the loaf pan!

GLAZE
The options are limitless! You can play around with measurements for your preference. 

I like to use 8 strawberries blended with lemon juice, pure rose nectar and water.

You can then add in powdered sugar or vegan vanilla or berry protein powder!
